Fiddleheading


T went fiddleheading on Saturday. We spent some of the afternoon cleaning them by hand. We finished cleaning them on Sunday night. And what you see here is a nice batch of fiddleheads covering my kitchen table, drying out after being prepped for freezing. So far, we have 6 meals worth in our freezer (about 3 gallons total).


We joined him last night to pick some more (the photo above is Monkey's attempt at photography - I think we need to get her a camera for Christmas because she loves taking pictures). We got between 1 and 2 gallons - and I'm hoping T has them clean when I get home from work today so I can handle the freezer prep and freezing tomorrow.

I love fiddleheads! It really isn't Spring in Maine until the fiddleheads are here! Yum!

Too Funny, I was just talking to my MIL about these, she picked them the other day here in Windsor, and I tried them for the first time. My husband LOVES them! Looks like fun...and a lot of work, LOL

Jamie - I froze them ALL. T will hopefully put a pot on for dinner tonight so we can have SOME fresh.

Jessica - the cleaning bit is a lot of work if you aren't set up for it. But we just sat out by the chickens and tossed some to them too every now and then. It will well be worth it when we're taking them out of the freezer in a few months. :-)

what do you need to do to freeze them?

Kelly - we parboil them, toss them in an ice bath and then lay them out flat on a towel to dry before putting them in freezer bags. (We do this with our green beans, too).

I love fiddleheads but haven't picked them since I was a kid! I know only not to pick the "furry" ones... How do you clean them??

SAHM - We shake them out by hand, tapping them in our palm (or on our leg) to shake out/off as much of the paper as we can. Then rinse, rinse, rinse and repeat.

Any lingering paper comes off in the parboil/ice water process.
