Recipes of the week

First off, we had the Tex-Mex Buttermilk Chicken Tenders and Corn on the Cob tonight. It was alright, but without using hot sauce, the chicken just tasted like fried chicken. I'm actually not going to save this one.

I've got 3 new recipes for this coming week.

A friend, A, shared this one with me earlier this week. It took a bit of google searching to find it online to share a link, but I found it. Mexican Chicken Lasagna is on for Monday night. A says both of her boys really liked it. She made hers in the oven and I'll probably do the same. I'm not much of a microwave cooker (and our microwave sounds like it's about to die, so I'm not chancing it!).

Next is Pork Chops Marsala. T found this online months ago - and we do enjoy Chicken Marsala, so it seemed like a no brainer that we needed to at least give it a shot.

Last but not least is Baked Macaroni and Cheese, courtesy of Alton Brown. I don't love mac and cheese (I know, what's wrong with me, right?), but T and Monkey both love it. So I'll try yet another recipe to see if I can find one that I enjoy nearly as much as they do.
