Cooking on charcoals

Normally when I talk about grilling, I’m talking about a propane grill.  We don’t have a charcoal grill and I’ve honestly never used one. 

T went on his annual camping trip a few weeks ago.  They rough it - out in the middle of the Allagash Wilderness Waterway with their canoes and their tents.  Don’t think about a cell phone.  Or a toilet.  But one thing these guys do right is food.  They eat like kings.

T’s favorite meal of the week was a jambalaya made in a cast iron dutch oven.  He’s been talking about it for 3 weeks now.  This got him thinking and so he did some research online last week.

Who knew?  You don’t need a charcoal grill to cook out with charcoal. 

We had Dutch Oven Turkey & Rice Casserole Saturday night (but we used chicken).  It was really good. 

Now T wants to venture into desserts.  We’ll probably do that this weekend, weather permitting.

With the Great American Backyard Campout coming up, this would be a good thing to try out that night!
